He prefers starting his day with oatmeal and wrapping it up with bacon and eggs. He believes in eating several small meals a day and keeping things simple. But there’s one food he just can’t resist: waffles.

In Willie & Annie Nelson’s Cannabis Cookbook, which he co-wrote with his wife Annie, Nelson confessed to a serious love affair with waffles.

“Annie makes me a waffle almost every day. I like ‘em with chicken-fried steak and gravy. I like ‘em with ice cream. I like ‘em with maple syrup. I never met a waffle I didn’t like,” he wrote.

One of the best waffles he ever had? Belgium. While on tour in Europe, Nelson and his band were treated to legendary Belgian waffles, and they made a lasting impression.

“The club owner sent a whole batch of waffles to our bus for two straight days. Fluffy on the inside, crispy on the outside, they came with a heap of fresh berry preserves. Hands down, the world’s best waffles,” Nelson recalled.

While his love for waffles may raise some eyebrows, it’s clear that Nelson also prioritizes his health. Last November, he released his 76th solo studio album, Last Leaf on the Tree, proving that he’s still as active as ever in the music industry.

In a 2023 interview with Parade, he opened up about how performing keeps him going.

“Your lungs are the biggest muscle you have. So it’s healthy for me to sing,” Nelson explained.

He also admitted that he gets restless when he’s not working on music. Staying active, both physically and mentally, has been the key to his incredible longevity.

“If you want to live a long time, you have to take care of yourself,” he said. “You have to pay for the day, every day. As you’ve always heard, if you don’t use it, you lose it. You need to move. So every day, I’ll jog or walk, do some sit-ups—just a little something to pay for the day!”

Last summer, Nelson had to cancel several concerts due to illness, but he’s back and ready for another tour. Even with the occasional setback, he remains confident in his ability to keep going.

“I take pretty good care of myself. And I feel like I’m in pretty good shape physically. Mentally? That’s another story,” he joked.

From his music to his humor—and even his love for waffles—Willie Nelson continues to be one of the most beloved figures in country music. As he hits the road once again, fans can rest assured that the outlaw spirit is alive and well.
